Nutella Sammies

We hosted a Memorial Day Brunch in our neighborhood this year and had an amazing time. I came up with a super easy and fun brunch dish for the kids and they loved it!

Mini waffles
Nutella or whipped cream
Strawberries – cut in halves or small whole strawberries


Toast waffles and let cool or just thaw them. Spread about a teaspoon or two of Nutella or whipped cream on one waffle and top with another waffle making a sandwich. Top each “sammy” with a strawberry. You can leave it like this or add a long toothpick like I did. Obviously, since these are for kids make sure the toothpicks are removed before they eat.

Simple and the kids loved them! Make your Memorial Day or 4th of July brunch a hit with these.

Perfectly Crispy Bacon – Every time


This couldn’t be easier! I was talking with a girlfriend of mine about how to bake bacon. Yes, us Southern girls do have entire conversations about bacon! đŸ˜‰ She told me this is what she does!


Line a cookie sheet with foil coming up on the sides so the grease is easier to clean up. Line the pan with strips of bacon. Place the sheet into your cold oven. Then set the oven to 400 and timer to about 18-20 minutes. That’s it! Mine only took about 18 minutes so watch it closely the last few minutes to make sure it doesn’t burn.

On a plate do layers of multiple paper towels to soak up the grease. You can also lay a rack on the cookie sheet to keep the bacon out of the grease while it cooks. Once your bacon has cooled use the paper towels to soak up the left over grease in the tinfoil wrapped pan and discard the paper towels and foil. No grease splatter and easy clean up!

Easy Breakfast Casserole


Breakfast Casserole

What makes this recipe so great? You do not have to make it the night before like most breakfast casseroles. Plus, the ingredients can be anything you like. Too easy!

1 tube of crescent rolls – they make them in solid sheets now for baking
Your choice of breakfast meat – I used sausage crumbles
10 eggs, beaten
2 cups shredded cheese (any kind you prefer. I used cheddar)
2 1/2 T milk
salt and pepper, to taste
And any other ingredients you want!

Preheat oven to 400 degrees. Spray a 9 x 13 casserole dish with cooking spray.
Line the prepared baking dish with unrolled crescent roll dough. Let it come up the sides a bit.
Layer the sausage crumbles and cheese (and any other ingredients) over the crescent dough. Beat eggs with milk, salt and pepper and pour over bacon and cheese.
Bake for about 30 – 35 minutes or until the center is set. Let cool for a few minutes and then cut into squares and serve. Enjoy!
